Kimpton Restaurants, the hotel brand’s dining and drinking arm, is tapping into ingredients with health benefits to create a spirit-free beverage lineup.
The limited-time Toast to Total Wellness Menu is divided into three categories: Caffeinate, Hydrate and Celebrate. Each category contains three nonalcoholic drinks, each of which is said to deliver various wellness benefits.
At The Betty in the Kimpton Sylvan Hotel in Buckhead, Ga., the list includes a Kombucha Mocktail, Berry-Infused Coconut Water and Matcha Latte. Both berries and matcha are rich in antioxidants, which can boost immunity, while kombucha is a probiotic that aids in digestion.
“For our wellness ‘cocktails,’ we have a love for all kombucha and thought it would be fun to make a no-alcohol beverage with it,” said Bill Brillinger, sommelier and head of the Sylvan Hotel’s beverage program. “For this we used a white peach puree, a little honey and fresh basil. Shake everything together and top with peach kombucha. We then add a couple of berries on top to garnish.”
The matcha latte is a combination of matcha and chai tea frothed together with oat milk, a pinch of sea salt and local honey for a touch of sweetness.
“Being from South Florida, coconut water is a very popular drink as there is always someone selling fresh coconut water at the farmer’s market every weekend,” said Brillinger. “This is a version of one of my favorites. We compress a little coconut cream with some toasted coconut and fresh berries, then add that to a glass filled with ice and top it off with coconut water.”
Fielding’s restaurant is on the premises of the Kimpton Armory Hotel in Bozeman, Mont. Kombucha is also the base of a drink there—the Kombucha-blini. It’s a mix of kombucha, ginger and fresh peach puree. Coconut Water with Pineapple and Lime Liquid IV falls into the “Hydrate” menu category. Lime liquid is a hydration multiplier that replaces electrolytes.
And for Fielding’s guests who want to caffeinate, there’s Bulletproof Coffee.
Although these particular drinks are available for a limited time, the Toast to Total Wellness Menu is adaptable to seasonal changes.
“We’re looking to change the kombucha cocktail up going into the fall, as we are now coming out of fresh peach season,” said Brillinger.
