Wild Rice Arctic Granny Apple Chicken Salad

This crisp, refreshing chicken salad with the fresh, apple-forward flavor is perfect for summer menus. The recipe was developed by Complete Culinary LLC for Arctic Apples and Okanagan Specialty Fruits.
Ingredients
35 oz. cooked and chilled wild rice
17 1/2 oz. Granny apples, 1/2" dice
32 oz. cooked, seasoned chicken breast, cut into large dice
7 oz. celery, diced
6 oz. red onion, small dice
1/3 oz. parsley, minced
6 oz. lemon juice
5 1/2 oz. vegetable oil, winterized
9 oz. orange juice
3 oz. Dijon mustard
1 oz. sugar
3/4 oz. salt
2 tsps. ground black pepper
12 lettuce cups
1/3 oz. roasted pecan pieces (per serving)
Steps
1. Mix together wild rice, granny apple dice, chicken, celery, red onion and parsley. Set aside.
2. In another bowl, whisk together lemon juice, vegetable oil, orange juice, mustard, sugar, salt and black pepper until well combined.
3. Combine the dressing with the main ingredients in the other bowl. Stir so that all the ingredients are well coated with the dressing. Refrigerate until needed. (It will taste better after a few hours in the refrigerator.)
4. Portion into lettuce cups and top with pecan pieces just before serving.
